SIT40521 Certificate IV in Kitchen Management

The qualification that takes you from cooking the section to running the kitchen. Trade skills, costing, rostering and food safety — assessed in a working commercial kitchen.

What You'll Learn

Every kitchen has cooks who can execute and cooks who can run a section, a roster and a food cost. This qualification builds the second kind.

SIT40521 covers the full trade skill set — stocks, sauces, butchery, seafood, pastry, special dietary requirements — and then adds the part that gets you promoted: planning cooking operations, designing and costing menus, developing a food safety program, rostering staff and managing a budget.

You’ll cook across a broad range of methods and cuisines, then take responsibility for the systems behind them. It’s the standard qualification for chefs stepping into supervision, and the direct route to a Sous Chef or Head Chef role.

Skills Across This Program

Who Is This Course For?

Your trainers are qualified chefs who’ve worked the roles you’re training for — head chefs, sous chefs and kitchen managers. They’ll tell you why a technique matters at 7pm on a Friday, not just how it’s written in the unit.

HOW YOU'LL TRAIN

Real venues, management-level content, and trainers who have run the shift themselves.

Trainers from the trade

Your trainers are experienced hospitality managers and operators. They've run kitchens, carried the labour budget, and handled the Friday night that went sideways. You get the practical version, not the textbook one.

Structured delivery over 78 weeks

Face-to-face practical sessions combined with theory and online components, across 64 weeks of training and assessment plus 14 weeks of scheduled holidays.

Full commercial kitchen facilities

Practical units are delivered in commercial kitchens with the equipment you'll use in industry: combi ovens, blast chillers, brat pans and a working pass. You learn on the gear, not around it.

How you'll be assessed

Assessment is competency-based and reflects industry standard, not classroom standard. Methods include:

Career Outcomes

A Certificate IV in Kitchen Management is the qualification employers look for when they’re hiring someone to run a section, a shift, or the whole kitchen.

Graduates work across restaurants, hotels, clubs, catering operations and function venues. The trade skills travel anywhere; the management units — costing, rostering, food safety programs — are what separate a cook from a chef with responsibility. In an industry with a long-running shortage of qualified chefs, that combination is in demand.
