Every kitchen has cooks who can execute and cooks who can run a section, a roster and a food cost. This qualification builds the second kind.
SIT40521 covers the full trade skill set — stocks, sauces, butchery, seafood, pastry, special dietary requirements — and then adds the part that gets you promoted: planning cooking operations, designing and costing menus, developing a food safety program, rostering staff and managing a budget.
You’ll cook across a broad range of methods and cuisines, then take responsibility for the systems behind them. It’s the standard qualification for chefs stepping into supervision, and the direct route to a Sous Chef or Head Chef role.

Structured delivery over 78 weeks
Face-to-face practical sessions combined with theory and online components, across 64 weeks of training and assessment plus 14 weeks of scheduled holidays.
Full commercial kitchen facilities
Practical units are delivered in commercial kitchens with the equipment you'll use in industry: combi ovens, blast chillers, brat pans and a working pass. You learn on the gear, not around it.
How you'll be assessed
Assessment is competency-based and reflects industry standard, not classroom standard. Methods include:
- Direct observation of practical cookery during service
- Dish and menu portfolios with costings
- Written knowledge assessments
- Third-party reports from your placement supervisor

Entry Requirements
- Minimum age: 18 years at time of enrolment
- Year 11/12 or equivalent, or a completed Certificate III or Certificate IV in a related hospitality discipline
- English proficiency: IELTS overall score of 6.0 (or equivalent) — no band below 5.5
- Completion of a Language, Literacy and Numeracy (LLN) assessment prior to enrolment
- Pre-training review / admissions interview confirming suitability for the course
- Students with prior study may be eligible for credit transfer — contact our admissions team to discuss

- Further study: SIT50422 Diploma of Hospitality Management, then SIT60322 Advanced Diploma of Hospitality Management
- Degree articulation: Bachelor of Business (Hotel Management / Culinary Management) through partner institutions
- Employment: Chef, Chef de Partie, Sous Chef, Kitchen Supervisor, Head Chef in a small venue
- International graduates: A Temporary Graduate Visa (subclass 485) may be available to eligible graduates. Chef is a listed occupation on Australia's skilled occupation lists — check current requirements with the Department of Home Affairs, as they change.
